How can the variant TITLE or Label also show in the order dtails? I sell his and hers sets. So if a customer chooses “His Size”: 8 and “Her Size”: 5, I only see 8/5, as well as the customer only sees 8/5 at checkout. It creates friction for them, and confusion for me when trying to fulfill. How can the label or title also show both at checkout AND in the order details?

Shopify does not have a way for the admin be customized like this.
Contact shopify support to log actual feature requests.
If a business has specific dashboard needs then custom dashboards should be pursued.

The crudest fix is to apply line-item-properties(LIPs) to items in the order from the frontend theme(online-sales-channel), or separate cart attributes , or overload the cart note.

It can depend on how products are setup leading to this problem in the first place, such as not giving productOptions full descriptive values.

To DIY line-item-properties , see here though the tutorial is unsupported and meant for vintage themes not newer OS2.0 or horizon based themes.

Depending on your setup you may consider updating your options and values from:
"His size": 6/ 7/ 8 to
"Size 1": "His size 6"/ "His size 7"/ "His size 8"

And from
"Her size": 4/ 5/ 6 to
"Size 2": "Her size 4"/ "Her size 5"/ "Her size 6"

This way it’ll look better in Admin and Checkout, but may be incompatible with your apps/fulfilment.

And yes, you can also push full info with labels in Line Item properties – would require some custom coding, but would give you most compatibility.
