Regarding: Wondering how I can build something like this myself. It depends on your technical skills. otherwise, you need to hire a Shopify developer.

It is quite a challenge to be in real-time unless the ERP has a webhook or callback. But doing it periodically is very possible, e.g. import once a day or hourly via app like syncX: Stock Sync.
