How to update product category/taxonomy while listing the product using rest api (unstable version)

I want to update the shopify product category using shopify (unstable version) REST Api.

I don’t know which key is used to update the category , I am able to set product type but not category.
Any help?

I think this is only achievable through the GraphQL Admin API: https://shopify.dev/docs/api/admin-graphql/unstable/mutations/productUpdate#field-productinput-productcategory
