I created a “variant metafield” in custom data.
When I am in the admin space, and I add a new product and I want to add a variant to it, and click on the “add options like size and color”, I expect to see the variant metafield I created. Am I misunderstanding the feature? I cannot find documentation on this. Thank you!
My hope is that I dont have to enter the variant options everytime I add a new product.

Yes, you’ve misunderstood the variant metafield feature because Variant metafield is a value which is assigned to the variants which means that it’s not variant itself but a value assigned to the variants created.

Are you talking about category metafields?
Then check the pages linked below.
Otherwise, you may consider not adding a product but duplicating existing one, or using, say CSV import from template spreadsheet.
Or use an app to create variants once the product is created…

Variant metafield is mostly used when you want to display different information on the product page related to the variant that updates when a variant is changed.
Meanwhile, product variants only displays one single information which is only assigned to the whole product itself to display on the product page.

Seems like you want to show metafield value as Variant values in Shopify admin, so that we you don’t need to enter text in variant field while creating product.
