Hi, I want to improve workflow for my store by focusing on a single product at a time. I am unable to organize the orders by tag.

You can filter by order tag. On the order details page click Filter, Tagged With, then select the order tag to filter orders by that tag.
If you’re talking about product tags, try just typing the product tag in the search bar on the order details page. That should work but if not you can tag orders with a tag, that contain certain products.
