I built landing pages in Gempages. When a user does a product search on our website, the landing page shows up in the product search. How do I NOT have any landing pages show up in a product search in our Shopify site, Thanks.

Depending on theme check the theme settings for search options to only show products or collections; that is if your not also doing content based marketing or have other pages you do want searchable.
Review the help docs
And check if the search and discovery app has a way to get the needed behavior.
Some themes may modify search query behavior however and be incompatible with the S&D app.
Alternatively hide it from onsite search and SEO with a metafield

This will hide pages from search engines.
To hide/suppress some pages exclusively from being rendered to the onsite search will require an advanced customization.
