I see payouts come in on random days, not matter what I do. I would just like to understand the process.

Sorry to hear your payouts are not happening predictably - we should be respecting the timing settings you have. Weekly payouts can be set for a day of the week, in most geographies. If they are not being respected and continue to happen daily, I suggest reaching out to support to troubleshoot your specific shop.
