So I tried and it is safe to do so. Switching from New to Classic customer account will ask customers to create an account when login. It is a bit weird for customer who already had an account on the new version, but when done they’ll have access to all they previous orders.

If you’re currently using multipass but want to consider new Customer Accounts, you can check out Shopify’s latest single sign-on (SSO) framework: https://help.shopify.com/en/manual/customers/customer-accounts/new-customer-accounts/identity-provider. This should be supported by the latest Customer Accounts model.
