Click the down arrow to expand the variants. Then click on the variant to change the inventory tracking option. Do that for each variant.

You can bulk edit products, and select “Track quantity” and “Stocked at” columns (these are hidden by default). Check and uncheck these accordingly. This won’t update an actual qty for the variants though.
When you create a new product, you will see an inventory option, that will “turn on” inventory tracking to all its variants, but once a product is created without inventory tracking, all its variants will be “turned off” and will have to be changed independently.
