I got my site speed to around 61, it still says I have a lot of unused javascript but idk how to remove that yet so is 61 ok as far as for SEO on google? thank you!

No one knows, don’t believe anyone who tells you they know exactly what score has what effect, only Google knows the exact formula.

Have you run PageSpeed/Lighthouse on your competitors? Just be faster them them 
Shopify requirement for theme store is to have at least 60 mobile score, so yours is acceptable.
What apps and tracking codes do you use on your storefront?
