I sell a lot of jewelry on my e-commerce site, so I’m familiar with variants. However, when it comes to Necklaces, Bracelets, Earrings, and so on, “one-size” is the only evident size.
Is it required to have a size variant in these kinds of items?
Also, if I did not have the one-size variant would that mess with google and the merchant center?

It’s not requirement at all, you can sell one variant if you wish.
Not having the one-size variant would not cause any issues. If you would like to add more variants, that can be done yourself. However, its much easier to add variants if the merchant already sells multiple variants.

I’m no expert with the merchant centre, but it should certainly not mess anything up!
All apparel products, including jewelry require a size, color and age group attribute to be added.
For size, if its a fit all product, one size is fine.
However generally, for necklaces I would add the length.
For bracelets the diameter
for earrings, one size is fine
