Is hiring a developer necessary for setting up an ecommerce site?

I am looking to bypass the extortionate web development quotes I have received and set up a shopify website for our business ecom site. I want to understand the benefits of using a developer to custom build this website through shopify vs setting it up ourselves with what looks to be very user friendly templates.

Context of our business:

Our business is an already established brand selling in pharmacies nationwide in Australia. We have an existing website however without an ecommerce function for B2C sales. Sku count sits at around 80 products.
