As it appears to be and correct me if I’m wrong, apps on Shopify update automatically.
But I’d like to know if there is a way to stop them from updating, at least for a few days.
That’s not an option. Apps are not deployed as stand alone code packages into each shop. It would be a conversation with the app dev themselves to see what options you might have on their side.

It’s more of a concern than an actual use case. For a few days, we will have substantial incoming traffic on our website, and sometimes –though very rare– updates might cause some unpredicted issues. But just the thought that this might happen during those few critical days stresses me out a bit. So I was just wondering if that was possible.
