and trying to understand how to set up my first shop.
At the bottom of the subscriptions page there’s an option for €8 “Pay Button”. I tried to set it up, but where do I pay? How does it work? All I see are the other plans (from €27 and up). How do I pay the €8 and start my shop?

In regards to pricing, the €8 “Pay Button” which you are referring to is considered our “Lite Plan.” This plan is for anyone who wants to sell products without maintaining an online store. For example, if you want to embed a Buy Button on your personal website or blog, then this would be a great plan for you. Alternatively, if you are hoping to sell your products in person, you could use this plan with the Shopify Point of Sale app and a card reader.
If instead, you’re hoping to maintain an online store, the basic plan like you mentioned starts at €27. This plan offers you all the tools you need to run and maintain your business. For example, you can create your online store, and manage products and orders right from your Shopify Admin. You can learn more here: The Basic Plan.
