We are a bike shop with many products available for local pickup within an our. That said, if a customer buys a new bike then it will be available in 5+ days for pickup.
How do you set expected local pickup time based on the product (eg. usually ready in 1 hour for most products, but usually ready in 5+ days for new bikes)?

My best effort right now is to write custom copy stored in metafields to display on product pages. But checkout experience still is hardcoded and I can’t change. 
Can you get he solution of this problem? Actually I want to add this feature my shopify store, if you share proper guidance I will implement on my website for good performance.
