I set up a meta field using “file” as my type.
I selected “all files”. It is a PDF file.
But when I go to add it to my page using “connect dynamic source” icon
from the custom view of the web page theme that filename does even list with the other meta fields.

You have created metafield with file format so you need to add image_picker settings in customizer then you can able to add files here.
