For POS, if you have Shopify Tax, since tax is calculated from the POS location, you have a couple options. You can either update your POS location address each time you go somewhere, or you can create a separate location for each venue.
Or you can use a third party tax app that has more flexible jurisdiction lookups.

Since Shopify POS uses the physical location of your device to figure out the tax rate, the easiest fix is to set up separate “Locations” in your Shopify admin for each city you visit.
Before you start selling at a new market, just open your POS app settings and switch your active location to that specific city. Shopify will automatically update your checkout to use the correct local tax rate for the day. Also, if your state has a special tax rate just for prepared drinks, make sure you set up a “Tax Override” for your drinks collection in your main Shopify tax settings so it doesn’t charge the standard retail tax.

For city tax rates seeing this at farmers market within the different rates, the cleanest setup is to create each farmers market as its own location in Shopify. Then, use tax nversides to charge the appropriate rate on prepared food items such as drinks by local jurisdiction. Group your product by a collection or be a product type (e.g prepared food) then assign the correct override per tax region. If you are running Shopify POS, designate each market as a different location so the tax will calculate according to city rate at checkout.
