When I put a red shirt in my add to cart it turn it to a black shirt. It just started this.

Now, to help with your issue, we need more info. Like your store link, is it password protected? From what page do you add the product to the cart., do you have Dawn theme or some custom code…
If I need to guess, blindly, it could be that you have added some app or JavaScript code that causes issues on the product page, so changing variants does not work, and your default variant is always added.
