I was looking around for an updated Postman Collection to handle the current Admin API endpoints and the way they work but I can only find this outdated ones:

That repo does look like it might be outdated - are you currently seeing issues when making requests to the Admin API endpoints via Postman, or you just need a shortcut to access the different endpoints?
Judging by this forum post, it doesn’t seem there is a very up to date collection, so you may need to manually fill in the gaps for any additional endpoints you need.

I was looking for an updated Postman collections for all of the Shopify Admin REST endpoints, just for test convenience, to check my requests will go through well before using the endpoints.
I realized what you said, there isn’t an updated one so I am making one and posting a github link here soon for the next person that needs it 
Ended up doing my own updated version!
