We are looking for help to set up bottle deposit which is required by law and it cant be priced in product price,so it will be extra fee which needs to be paid by customer.This fees varies as per the size of the product and it should automatically added into the cart as per the size.like any product below 1000 ml will have 0.10 fee above 1000 ml will have 0.25 fee and goes on …

Have you checked out https://apps.shopify.com/canteen ? The canteen app does all the bottle deposit work for Shopify. Both for Online store and POS. Let me know if you need any help with setup etc.
