I have an item (kayak) that shows no shipping required. I believe it was check as Non-physical, How could I reverse that? when I open the item details it does not give me the options to uncheck this feature.
We need to fix the setting for shipping locations but does not let me to select this item
It’s in the product details page. If the product has variants, click on a variant to change it for that variant. Here’s what the setting looks like:
If the customer already placed the order, you can create a product called Shipping charge and add that to the order. I’ve also seen people request payment via PayPal if they already paid with PayPal that would probably be the easier method for them.

If the kayak does not have any variants, then you should see a box that allows you to mark the product as a Physical product as suggested by @JoesIdeas . This view should be familiar as this is the same view when you create a new product.
If the kayak has variants, then the Physical product checkbox will become variant-based so you can have a variation of physical and non-physical variants. Simply click into one of the variants and you’ll be able to find the checkbox.
That being said, if you’re trying to mark a handful of variants as Physical products, then using the bulk editor may be the easiest option. From there, simply add the Requires shipping column and check the variants that are physical products.
