Changing the theme has nothing to do with the products itself as products are completely different part of Shopify admin dashboard and if you do change your theme then all your products will automatically be shown on the new theme as well. Yes, you will have to make changes in the product page of the new theme as the product page needs to be designed on the new theme. Other than that, no changes are required on the products itself.
