I’m wondering if there is a way to pass extra Product Information in any Payment Gateway? Like after hitting the Pay Now Button (we’re using One-page Checkout by the way).

If you want to pass extra information with the Shopify product then you can use the product property under the product page form, when product add to the cart it will pass additional information using property property.
You can edit your product template and fine the product form. You can add product property field like this.
