Payment App extension update in the installed merchants

Hello

I have an issue with how to update a payment app extension that has been installed on many merchants in a live environment? do not want to force merchants to uninstall App and reinstall the App again, please advise the workflow? , what is the difference between doing development/publishing on a live app and on a draft app? so many merchants are working on it to avoid affecting merchants’ payments?
