This is like one clumsy step between the POS app and the Shopify servers. Quick fix: Switch your POS hardware offline and back online to reset cached settings. Moreover, manually turn ON your custom payment method from POS settings to make visibility stable in peak time.

There’s actually no option to manually force the custom payment methods in the POS, you can only check on the “built-in” credit/debit and cash. At the moment it seems to be stable, however, so I’m hoping the problem does not pop up again.
