I’ve run into that same issue before when managing POD orders manually.
When you list products manually on your Shopify store (rather than pulling them in from the POD app), Shopify expects you to define a shipping method otherwise, it assumes the product isn’t shippable, which is why it appears out of stock.

You’ll need to create a manual shipping profile (Settings > Shipping and Delivery > Create New Profile), then add your custom products and set your shipping rates (flat rate, weight-based, etc.).

They won’t be routed through the POD provider unless the product is directly linked to them via their app.

So, as long as you’ve set up your manual products properly (with inventory, pricing, and shipping profiles), customers can place orders, and you’ll receive payment through your usual Shopify payment gateway. You’ll then need to manually forward those orders to your preferred print provider if you’re still using POD for production.
