So, I sell plants. I take orders in the winter and wait until spring to ship them. I’m looking for a pre-order app that will let me take pre-orders, but have users select a week for shipping for their entire order. (e.g. May 1, May 8, May 16, etc…)

I’ve used timesact so far, but it really only works with 1 shipping date for the entire store. The only way to implement multiple shipping dates with that app is to create multiple variants for each product, where each variant has a different shipping date. This is a non-starter for me.

I’m also looking for a way that users can edit their orders after they are placed, but before they are shipped. I’ve tested a couple order edit apps, but many of them don’t seem to integrate well with pre-orders (subscriptions).

Any advice for a more robust app I can install to manage pre-orders, customer defined shipping dates, and provide customer ability to edit orders?

I recommend giving the Easify Product Options app a try. It allows you to add a Date Picker with the option for customers to make multiple selections on your product pages.
