Even though I have chosen many shipping options from UPS and USPS, the only option my customers see is Priority Mail. I cannot figure out why.

It sounds like your shipping settings might have a restriction or conflict. Double-check your Shipping & Delivery settings in Shopify to ensure that all selected UPS and USPS options are correctly enabled. Also, verify that your shipping zones cover the locations you’re shipping to.
Another possible issue is that carrier-calculated rates might be filtering out other options based on package size, weight, or destination. Try adjusting your default package dimensions in the shipping settings or testing different addresses at checkout.
