Despite my various searches, I unfortunately did not find an explanation for the problem I am encountering.
I currently have a store which is configured in French. I use Weglot to translate the pages on the site and I have never set up email notifications to be translated.
Despite this, when a customer places an order with the default language “EN” with Weglot, the customer receives a notification in English.
What’s even more curious is that this notification is old text, not the notification as configured in Shopify.
I wonder then if there might not have been an old application that would have created this kind of error, because I only have one translation application.
I have already contacted Weglot and despite our research the problem would not come from them.
Is there a way for Shopify experts to check if an app has left traces other than in my theme code? (Because I follow the theme updates and often start from 0) the notifications are not linked to the theme there is normally no link between the 2.

It sounds like you have already done some troubleshooting on this issue with Weglot, which is great to hear.
If translated notifications are being sent to your customers then there are only a few ways that could be happening - Either there is an app installed on your store that is overriding your notification emails or the templates in your store admin under Settings > Notifications have translated sections that have not been updated.

In regards to your question: “I wonder then if there might not have been an old application that would have created this kind of error, because I only have one translation application.” If an app is no longer installed on your store it would not be able to control the email notifications being sent to your customers. Unlike code in a theme file, an app would need to be installed and active to be able to override the emails being sent out when a customer places an order. The only caveat for that would be if the notification templates in Settings > Notifications has changed, as those would not revert if an app was uninstalled.
I would recommend reviewing your list of apps on your store and checking the settings for any other translation apps and email apps and going through your notification templates for any hard coded translations in there. You can also set your notifications back to default and place some test orders on the store to see if that triggers the incorrect emails still.

Indeed, several tests were carried out without success, we cannot understand where these translated emails come from which are different (in text) to those included in the notifications from the Shopify backoffice.
I have just checked, there is no untranslated passage in these notifications nor of elements allowing to pass the text in English, only French indications.
I will therefore contact support for further investigation in order to have more details, because we do not have other applications that can handle notifications or that can handle translation.
For example if the customer is Spanish and the order is placed as such, the notification arrives in French because not translated, the case occurs only if the customer is English and the order is placed in English.
I do not know where to change le email notifications translations.
I only can see original language in the messages but as I have the shops in German and French I don’t know where to find the messages texts in German and French.
