When we sell out or choose to take a product off shopify we " Remove from available channels" as we cant delete the products as it affects other programs.
However this makes Visual merchandise the webpage difficult.
If I archived these products would they still come when we are trying to merchandise the website?

Yes, after archiving a product, you can simply unarchive the product through the Archive tab on the Products page of your admin. Archiving the product hides it from your sales channels and the admin, which can be brought back at any time. It’s worth noting that products are set to draft status by default, so remember to set your product to active status. Archiving a product will not delete the product data or history from your analytics, so you’ll still be able to see the data in your reports. However, it’s important to note that when reactivating/un-archiving a product - the product does default back to the draft status. As a reminder, you’ll need to make the products available again and change the status. Alternatively, you can also consider just changing the product status to draft, as that will hide your products from your sales channels as well.
If you’re wondering, deleting a product also doesn’t remove the data from your analytics. Nonetheless, this does break the link in the reports that takes you directly to the product page in your admin.

I understand you’re looking for a way to exclude archived products from the reports. While this depends on which type of report that you’re working with, you may be able to add filters to exclude a number of products. For example, you can add a filter for Product titles or Variant SKU and use the “is not” filter with the sales by product reports - from there, you can select the products you wish to exclude.
Third-party apps, such as Better Reports, is also highly recommended for advanced reporting. If you need any help with this app, the app developer is always available to assist you - you can reach out to them directly through the contact information found in the Support section of their app’s page.
