All of my orders appear to be tagged with “shopify:shipping”. Is this the case for everyone on Shopify? Does an app I have tag it with this? It is annoying because the order tag has no informational content and even applies to orders that are sold at POS. How do I change this (Do I have to use Google Flow to remove the order tag)?

Nope, by default it should be blank. I would check all the apps that have been installed, maybe one of them has a setting hidden somewhere for it.

You could also try reading the timeline on the order details page, that might provide some clues on apps that alter your orders.
Thanks for the info. It appears that one of the packing apps is adding tags and could not identify a way to change the tagging. I ended up using Shopify Flow to remove the tag automatically in specific cases.
