We recently removed the Easy Tabs app and now we cannot see any product s=descriptions on our site. They are still in Shopify but not visible to customers.

Please check you have removed all the assets of that app? if yes and till you are not able to see then could you please share your store URL so can check and guide you accordingly?

try a file rollback for any files the app may have changed, or restore a theme backup if you made one.
Some apps that modify themes have a specific process that needs to be followed before you uninstall, since once you uninstall the app cannot interact with the store at all to undo any changes it made.
