I have my name both at the bottom of my store and when I go through the checkout. How do I get rid of that?

Great question!
The wording that appears in the footer of your store, at checkout, and throughout your entire website can be changed through your store settings.
From your Shopify Admin head to Settings > Store details > Basic information > Edit > Store name:
