This is a great question! I can definitely see the benefit for you in changing the names of the payment gateways you use in your email notification templates.
While I don’t have the script available to replace what you have in your notification templates at this time, this is something that our theme support team may be able to help with. We provided 60 minutes of design support time on eligible stores and notification templates fall under that as well. If you submit the request to our live support they can escalate this for you. You can also reply back to your most recent billing email with the request as well and our team will assist you through email.
