Do I plan on going out the country to Mexico in a few months, was wondering if I was able to run my website while I’m there, I’m located in the US but was wondering if that would be a problem if I’m in Mexico for a few weeks
You’re allowed to go on vacation! 
Shouldn’t be any issues with logging into the Shopify admin from a different country.
