In 99% of cases, if your store is publicly available (not password protected) and you’ve submitted a sitemap in Google Search Console, then you’re good to go. You don’t need to “activate” SEO like a channel.
But, you do need to make sure you install/activate Google & YouTube, which enables organic product listings for your store.
