How to I set up an automated email to send to a customer after they place a certain number of orders?

Great question. You can achieve this through customer segmentation and an email marketing app. You would segment customers by >2 orders, then set up automated emails to that customer segment.
Do you currently have an email marketing app? You can use your current email marketing app or Shopify Email.
You can use Shopify customer segmentation filters, to create a new customer segment.

I really want to set up an automation that automatically emails a customer after they place their second order. We want to send them a discount code and certain order intervals (2, 5, 10 etc). we currently use shopify email

You can follow the same steps to create segments for customers with 2 orders, 5 orders, etc. Once they’re in a segmented group you can create marketing campaigns for those segments and tailor them to the number of orders the customer receives!
