The past week, I noticed a significant increase in visitors to my site, but decreased revenue, which is odd. When I looked into the session detail, I’m seeing a huge increase in sessions from other countries. This is completely out of the norm for me. I feel like there’s bot traffic or malicious traffic. Or possibly that the Shopify server I’m on has been HACKED.

First, I think is highly unlikely that a Shopify server is hacked. There would be a much worse issue than visits.
Visits can be from bad bots or some scripts that scammers use to check all Shopify websites. There is a lot, a lot of scam emails around.
From paying for a free theme to “experts” who can help you get 40K in sales in a week. Or just regular spam. Have you maybe received something similar, or clicked on some link in emails? Scammers do exchange/sell emails and emails just can increase.
It is unlikely but I think you should check your referral site to see which links this customers are clicking.
