It’s baffling to me that the default view of the Orders page is “All.” Why would I always need to see fulfilled orders that have been archived? They’re done and gone, my only concern is seeing unfulfilled orders, so is there a way to set the default view of the Orders page to only show unfullfiled orders? I know there is a filter option at the top, but I’d rather not have to click this every time.

So lousy this much wanted feature is still missing 
You can do nothing about the default Orders view in Shopify. But you could create a filtered view for unshipped orders and bookmark that url in your browser. If you use that link as your go-to orders page, then you have a simple one-click solution instead of having to add the filter all over again each time. I hope this helps you.
