Can I set up the store without having to choose a paid plan?
I don’t have a problem with paying for a plan once the store goes live but I’d like to spend a bit of time learning all the features and setting everything up first.

After the 14-day free trial, you’ll need to select a paid plan to continue using the platform. Shopify offers different plans to fit different business needs and budgets, so you can choose the plan that works best for you.
In your case, I think you can try Shopify Basic for $1, which is one of Shopify’s most basic plans. You are allowed to pay $1 for the first three months and can start building your online store on the Shopify platform.
