As the title suggests, am I required to list my app on the Shopify app store if I only want to kick off the OAuth process within my app using a client credentials workflow?

Custom apps created from your partner dashboard use OAuth, and they are not intended to be listed on the app store like public apps. There are certain limitations depending on app types, and you can find a summary table here.
