You can’t create collection which will contain products based on word or phrase on description directly on shopify.
However there is a workaround, you can use app Power Tools Bulk Edit Tags which allows you to tag items by phrases on description and title. So in the end you can create a tag with app and collection on shopify which contains items with specific tag which you added using this app.
