Using Shopify Flow, I would like an email sent to my shop manager with orders with Local pickup selected. Is this possible? I can’t find ‘Local Pick Up’ in the templates.

I think that is stored on fulfillment order / delivery method / method type == PICK_UP.
So something like Order ready to fulfill → check condition above → Send internal email
