With Meta Commerce (Facebook & Instagram) automatically syncing all the discount codes, we need the Discount Code page to have a Channels selection. I need to remove the Facebook & Instagram channel for a few of our discount codes reserved for Wholesale and Ambassadors. These are not to be shared with the general public.

That would be a useful enhancement. A discount-code channel-level setting would alow merchants to better control the distribution of promotions, and keep wholesale or ambassador codes from appearing on sales channels like Facebook and Instagram. As workaround you can use automatic discounts for public offers and create channel specific promotions via apps or store logic, and keep the sensitive discount codes only distributed among your wholesale / ambassador workflows.
