Would you please tell me where I can find good video tutorials on building a Shopify Store based on SEO and how to opmizing it so that it ranks high on Google, If you have an online course or video tutorials would be great. And If I connect my Shopify store to Google Shopping is there a way to optimzing it from the SEO point of view for Google Shopping?

The basis of your ranking for Google shopping, is your data feed. While I do have a lot of videos I can share, there are many to list that apply, so have a look here: https://www.youtube.com/@feedarmy
However, what I recommend you do, is look at the data feed requirements and recommendations, and then implement and improve the attributes listed here: https://support.google.com/merchants/answer/7052112
This will increase your data feed quality, resulting in higher ranking. Then you need to manage a good strategy in Google Ads, test different strategies for a few weeks, and see what works best.
For example is using a normal performance max with assets campaign better than one without assets?
Or is setting up performance max excluding the branded product names (if you are the manufacturer) yield higher returns.
If yes, targeting branded names separately in a standard shopping campaign might be best. 1 thing you should remember is that not all strategies will work. I manage a lot of clients, and not all accounts use the same strategy, as it depends on the ROAS goal, what they sell, and who the merchant is. etc.
