I would like to add an error message on the cart section if variant quantity is less than the current variant quantity after updating the cart. You can try the product “Cardigan Set” and set the variants in to Sea Blue and 6M, currently this product had a quantity of only 1 and if I set it into 2 and click the update cart button the error should be appear since the current variant qty of this product is 1.

You need to turn off “Continue selling when out of stock” and turn on “Track quantity” in the inventory part of the product which you want to show an error message on the cart section if less than the current quantity.
Admin store > Product > Selected product you want > Find of part “inventory” > Set up options as below figure
