I am looking for a theme that has a size and availability filter built in. Preferably the user can filter by their size and then only see products where their size is in stock. Similar to the screenshot below. Can someone point me to a theme that does this well? Or perhaps an app?

There is an app solution. Its the shopify search and discovery app. SInce its from shopify itself its free and easy to use as well. It very good for small to medium size business even big ones when requirements are-as easy as yours. this gives a more features like setting product recommendations for a particular product, adding filters via metafileds, etc

You can use the following themes

1.) Impulse by Archetype Themes (I recommend this) - Link to theme.

2,) Warehouse (by Maestrooo) - Link to theme

3.) Prestige (by Maestrooo) - Link to theme

If you want to use the app, you can use the - Boost Product Filter & Search - Click to check the app on Shopify store.

If you want to use all the filters, you can use the app or if you want to use the Size filtering & Availability-aware filtering (i.e., only shows products that are actually in stock in the selected size) then you can use the theme.
