Yes in my store too teh product category is showing in chineese very surprising .
For my shop as well. I am located in the US and only ship/sell to the US. The language chosen in settings is English. When I clicked on the Chinese to see what the drop-down menu did for other category choices, it changed to Dutch. But reverted to Chinese later. Must be a glitch in the Matrix. 
Me too, I’m in Australia, it’s 7.30am, was fine last night when I went to bed and today, first up the product category field is in Chinese. Must be a bug at Shopify?
