Spotlight theme > Collections > Change displayed "From" price to "Lowest In-stock Variant Price"?

Hi folks,

I’m working on a new version of my site using the Spotlight theme. The default for the theme is for Collections to display the Lowest Price of Variants as the “From” price, however my store has many variants that will never be in stock, so I would like to display the lowest price from among in-stock variants instead. I know it requires a minor code adjustment, I’m just looking for guidance on the exact term that needs changing.
