Hello, just wondering why some of my out of stock items have a strike through on the size which is unavailable but on other items the unavailable stock is left without a strike through and they have to click on the size to see it is out of stock.

Regard your concern to strike through on some out of stock item.
This is kinda hard to customize because it is required your have knowledge of coding stuff to change the code in theme. And solution with one variant only, if you have more than 1 variant, you need to customize a lot, including JS, so I can’t guide you in detail. And it will be difficult for someone else to help you only with the instructions.
And one more thing the custom code is depend a lot on your theme.
